Kim has gained popularity by creating services that no one else does in Finland. He stays busy operating Bolt Arena food services, Gourmet restaurant Inari, Koti by Kim Mikkola food order service and KotKot chicken, all simultaneously. The passion for making simple things golden is reflected in every culinary area Kim works within.

The star chef has always believed that if you want to make a simple chicken burger the best in the world, go for it. For Mikkola its all about believing in your own craft and staying consistent.
Staying authentic to yourself is something Kim emphasises.

 

Kim doesn’t feel the need to dress up to culinary standards or act the way one is ‘’supposed’’ to in his field of work.

‘’I have always told people: stay true to your own beginnings, interests and values. There’s this odd belief that to be able to succeed in the restaurant world, you need to follow this made up system. If I wanna go to a meeting with sweatpants on instead of a blazer, that’s what I will do’’

Kim has always stayed true to his humble beginnings. He was born to a single mom, who barely had the money to feed Kim and his brother. The passion to create a business based solely on his values, to treat every employee better than the average restaurant would, is what keeps the chef going daily.

Kim pays €5 more hourly than the average restaurant, no matter the basis or experience of the employee. ‘’The more we support our locals, the more everyone benefits, which results to the benefit of the society’’ Kim adds.

Adding up to how the ideal restaurant world looks in the eyes of Mr. Mikkola, the chef wants sustainable development to be sustainable for the people. ‘’I want the society to be able to facilitate such an environment, atmosphere and economy where every employee can live their life without the need to think about every meal. The more we give, the more we receive. Sadly, Finland only listens when someone ultimately succeeds, which is why I want to provide the blueprint for change.’’

In addition to sustainable development Kim wants to break the thought that a person needs to act a certain way to fit in the genre of the culinary industry. Kim wants to be an example to stay true to yourself, not to ever be ashamed of where you come from. Ultimately, for Kim it’s about finding your personal happiness and following it. ‘’I want to unify different cultures, which is possible via cooking. What we need for change is transparency, wellness and most importantly to have fun.’’

The future holds a lot of endeavours for the Kotman. In addition to already operating an art gallery, The Platform in the heart of Helsinki. Kim wants to produce KotKot streetwear. The prototypes are already designed and while his food services keep operating and new ideas keep flowing, Kim wants to only keep creating. Do good and good will come back, he ends.
